Green Beans with Peanuts and Chilies

Serves 4

1 pound green beans, trimmed and cut on the diagonal in 2” pieces
1 tablespoon non-aromatic olive oil
2 (2-inch) dried hot chilies
2 tablespoons raw blanched peanuts (the Coop has them)
1 large clove garlic, smashed and finely chopped

Steam or boil the string beans until just tender but still crisp, 3 to 5 minutes.
Immerse into cold water to stop cooking.
Set aside.

Heat the oil in a skillet on medium-high.
Add the chiles and peanuts and cook until the nuts are golden.
Stir in the garlic and fry, stirring, 30 seconds.
Add the beans and stir fry until heated through.
Serve immediately.
