26 Jun Simple Fava Beans
1 can whole plum tomatoes or 2 large fresh tomatoes
2 cups Fava beans removed from pods
½ lb. bacon cut in ½ inch pieces
1 onion , chopped
Tear the canned tomatoes into a bowl into bite size pieces or rough chop the fresh ones and retain the juices.
Parboil the fava beans in plenty of water for several minutes and strain and discard the water.
Cook the bacon in a large low pan that has a lid. When bacon is crisp remove from pan and use the fat to sauté the onion.
Add tomatoes and stir to blend over low heat. Add fava beans and bacon. Salt to taste.
Put the lid on and simmer for at least 15 minutes or up to an hour. The flavors blend the longer you cook the mixture but you don’t want the beans to get mushy.
Serves 4 to 6
