Spicy Cucumber Salad

2 cucumbers
1 tablespoon white vinegar or rice wine vinegar
2 tablespoons sesame oil
1/2 teaspoon salt
1 teaspoon soy sauce
1 tablespoon sugar
1 Thai Dragon hot pepper

Peel the cucumbers, cut lengthwise in two, and scrape out the seeds. Cut cucumbers crosswise into half moons. Whisk the remaining ingredients together and toss with the cucumber to coat them. You can control how hot the dish becomes by removing the seeds and pulp of the pepper or you can use just a slice or two of the hot pepper. If you don’t have a Thai Dragon hot pepper, substitute hot red pepper flakes or hot pepper sauce. Makes 4 servings.
