Herbed Zucchini Cakes

Herbed Zucchini Cakes

2 ½ cups grated zucchini

1 cup bread crumbs

¼ cup minced onion

¼ tsp dry mustard

¼ tsp salt

¼ tsp pepper

¼ cup total chopped parsley and rosemary

1 Tbsp lemon juice

1 egg

1-2 Tbsp flour

Mix all ingredients together.
Drop by spoonful onto a lightly greased griddle.
Brown, turn, brown second side and serve.
