Veggie Wraps

Grate or finely chop a variety of veggies. Today I used zuccihni,  carrots,  beets,  radishes and Napa cabbage. Make dressings or use your favorite salad dressing. Spread dressing on a whole lettuce leaf, wrap and serve whole  or slice in bite size pieces and secure with a toothpick.

Lime hoisin dressing

¼ cup hoisin sauce, 1lime zested and juiced, 2 tsp cilantro finely chopped.

Tahini dressing

¼ cup tahini,2 Tbsp. apple cider vinegar, 1 Tbsp.  lemon  juice, 2 tsp olive oil, 2 cloves garlic pressed, salt and pepper to taste.

Yogurt dressing

1 cup plain yogurt,1 tsp. apple cider vinegar,  1 tbsp. honey, 1 tsp. Dijon style mustard, 2 tsp. fresh dill finely chopped
